I recently picked up a recurve with ff strings that I'm pulling 47# at 27.75 and I'm finding I can tune a 2016 cut to 30" with 125 head pretty good. When I try to tune a 400 spine carbon with 270 up front I'm still stiff.  My question is do most people at this weight try to tune the 500 carbons or leave 400 full length to tune. I feel like I could either to work but just wondering what others do.

I use point weight, not arrow length to tune.  I cut my arrows one-inch longer than my draw -- 29 inches BOP for a 28-inch draw.  Shooting about the same draw weight you are.  I use 500s.

I think those 400 spine shafts are going to be a bit too stiff to tune without using a long length and heavy point weight. And they are going to be rather heavy.  I would go with the 500's at that draw weight. I think you'll find your bow will perform much better with them.    Kirk

I would go up in head weight from 125 to 145 and retune. I can shoot 340s out of a bow that weight with no issue.

I also use point weight to tune the arrow length I want.
