Wild hog bacon

Finally got around to making sausage from the wild hog I shot last month. As I was cutting up the meat, I came across a piece of hog belly that had enough good meat on it to make bacon. Never saw one that had enough fat before. This boar had lots of fat all over. I'll probably just fry it up fresh.[attachment=1,msg2914085]

That does look good. I didn't realize for some reason you could do it on wild hogs.

Looks darn good.  Wild pig is a staple at our house.  But I e never done bacon out of one.
I can afford to shoot most any bow I like.  And I like Primal Tech bows.

  I hope it comes out good. But, when ever my mom would fry up bacon that had a strong odor (Pissy) she would say that it came from an old boar.
I would've taken better care of myself,if I'd known I was gonna live this long!

There are a lot of factors that go into the flavor of meat, be it wild or domestic.  Had a cow once that was a bit wild, busted through fences and ran all over.  Had to shoot her to catch her.  She tasted just awful.  Had the same experience with an antelope my brother shot that had been running all over.  Dog wouldn't even eat it.
My thoughts are that if the animal was calm and unstressed it should be pretty good.

I fried a piece and the flavor was good. I may go ahead and cure the rest. I cut it too thick, though and it was hard to get it crispy. The breakfast sausage turned out great.

I hear ya I just finished a plate of bacon from a hog I got from my brother (he raised them)  and I'm ready for a second plate, never trued wild pug before but it looks delicious

No, he was well endowed,lol. Just young and fat enough to be good.

Congrats on that bacon!!! Sounds absolutely delicious!

I don't want to stray off topic, but hog hunting sounds like great fun. If some of the states that are having huge problems with hog over-population would just make an "open season" by listing the hogs as vermin (or the functional equivalent) so they could be hunted w/o a license the hog problem could possibly be alleviated (but i could be very wrong..).

Doubtful.  We hunt them hard here in Texas.  Considered a feral species.  Open season all year and no bag limits. 
We trap them, shoot them, stick them with arrows, spears and knives.  We run them with dogs, chase them with ATVs and do it night and day. Few restrictions.
I personally love having them to hunt but their numbers can get out of control.
I can afford to shoot most any bow I like.  And I like Primal Tech bows.
