EA-40 is good stuff. You can post cure a 2-1 mix and end up with a heat deflection temp of over 200deg. Which is great if there is any chance your final glue-up might slip around.
Of course just about any quality epoxy will work fine if you don't have any EA-40

I use unibond 800 for my wood boo glue ups.

Sometimes ea 40 for the riser but mostly unibond800.

But always ea 40 for tip overlays.

how long do you have once mixed to going into a boil?
I had the west system boil and burst into flames in a cool whip tub I was holding when I built my Lobster skiff,
I never farted around when I used that stuff, after that

I can only speak frow my exsperience but have had glue ups go 1 1/2 hr with no issues at Aprox 75 Deg F  but my normal glue up is 1 hr I always do dry runs before gluing up saves time at show time ! Never had flames with EA-40

It doesn't heat up the way the west systems does.   Had something similar happen way back when a guy insisted on making him a bow with it.  Barely got it layed up and the plastic container it was mixed in melted down.  :)  that bow broke while it was being strung but I wasn't there so don't know if it was the glue or the guy stringing it.

Use the smooth on for sure.
