I was given some black eagle vintage 350's for Christmas. I just got around to playing with them after our season ended here. I shot them out of my 50@28 mesa, which I draw to about 30.5 putting me around 54-55 pounds. They are cut at 31.25", and I started with a 100 grain brass insert and a 300 grain field point. This flies dead straight left and right but knock slightly high. Does this seem right too you guys? It seems like they should be way too weak to me.

That seems about right.  .350 deflection is about 90# spine (1.94# weight measured at 28 inches between the posts, i.e., Easton's way).  Regardless, it's how the arrow shoots, not what the charts say.  If it shoots good, go with it. 

I agree. I've had some funny business with arrow spines, but as long as it flies right the spine number doesn't matter. If it hits where your looking the critters won't care what spine it is =)

From what I have read that slightly nock is what happens with that kind of FOC I don't shoot heavy FOC  but I got friends that do
