Various backings

I've been asked to do several bows by my friends.  Since they know I'm working as a sushi chef they wanted some rather unique fosh backings such as the ahi tuno skin (which I think may be too thick).  
I'm understanding some materials are illegal to use, but cannot find a list of what those would be.  I am assuming that these include any endangered species. Is this a correct assumption?

I figured it would be just as easy to ask instead of risking getting anyone in trouble.

I think that would pretty much cover it.
If there is one in question might call fish and game to ask.

Catfish if large enough makes a good one. I've,used several types of carp.

My guess is that if you're allowed to eat it, you can put it on a bow ....

If you've got a skin - use it. After all if you don't use something that you already have then it's just going to go in the bin. Better to use something than waste it.
I LOVE sushi! Can't beat a tuna nigiri with a bit of wasabi  :)

Very true on the skin, and the nigiri too.
