Is all sinew usable.

I've read of deer, elk and bison sinew used for backing bows. Any reason domestic cattle sinew wouldn't work?

No reason to my knowledge.  Everything that I have read says that it will.  Having said that I heard that deer siniew has considerable more spring to it.  Think of a deer leaping over a fence and a cow trying to. :-)

Cow sinew will work but I have heard it is difficult to separate and it is very greasy.
Make the most of all that comes and the least of all that goes!

I think some of the Ottoman Turks used cow sinew in their bows.

I have some deer sinew if you want it.  I tried cow to no avail.
