My week one monster was made into breakfast sausage that we enjoyed for breakfast in week 2.

During week 2 I took one of the javelinas to Ruiz Custom Meats in Laredo and had the whole thing made into chorizo. For the uninitiated, chorizo is a Mexican sausage made with spices and vinegar and very finely ground meat. We ended up with 11 roles of chorizo sausage. Everyone on LTR 2 got to take a roll or chorizo home.

Terry's photo of chorizo and eggs reminded me that I have been eating my chorizo too.

Here is a Super Bowl Sunday dip I made with chorizo, refried beans, cheese, salsa, and green onions. It was great.

We won't talk about the first day of the hunt other than it was action packed with Meathead shooting a double (I missed my opportunities). I got a few pep talks from the gang that evening, back at camp and was reset for the next day. The next few days were filled with wildlife watching. I spotted coyotes and bobcats chasing down rabbits many times. Also many many javelina and whitetails.

As the evening of the last day closed in I began getting many stalking opportunities. With around 40 minutes of light left, I was able to get into range of a group of 4. They got down wind of me, and scattered across the brush. I tried to get in between them and cut them off as they regroup. I set up on a dried up creek bed as one ran passed at full speed less than ten yards away, and I stuck it right at the top of the heart. It ran and died on her feet less than 20 yards from impact.

What a hunt!
