IMO, no matter which way the grain runs in your I-beam, it's still stronger. The individual fibers are still somewhat in contrast to each other in the other pieces of wood, that along with the glue, make a stronger unit.

According to the building industry laminated wood is stronger than solid wood. That's why all the support beams in homes are now made with multi layers of wood.
