These are more "meat processing" than hunting but I thought you guys may enjoy a look anyway.   :D  
The Big chefs knife is over 16" oal, w/ a 10" blade! The small paring knife has a 4.5" blade and is 8.5" oal. Both are .095 15n20 with natural micarta scales and brass pins.

I owned a butcher shop so I feel qualified to critique.These knives look like they wood work just great!A bit pointed for my taste,but the way you have the edge well below the handle sure helps when cutting meat.Would have enjoyed using a knife like that back in the day.Beautiful work.
