I need advice on drying sinew. I currently live in the city :( and i work in a kitchen where i am often breaking down meat for steaks ive been saving the back sinews from filet primals after breaking them down.So down to brass tacks im thinking of drying my sinews in a food dehydrator does anyone have any experience with this. Is this a suitable way to dry sinew. i just dont have space to air dry it slowly.

A food dehydrater should work fine as long as it doesn't get too hot. You could also place the sinews on some aluminum foil on top of the kitchen frig and it will be dry in a day or two.
I done some backstrap sinew in a dehydrator before and it seemed to work just fine. Like Pat said you want to use a lower heat setting.
If it is hot out i did some in a day in the sun at mojam this year. But i bet id you just placed it in the oven with no heat that would work
I do most of mine in a dehydrator. Just do it at 120degrees.
