Just curious what would be an entry level belt sander to cut the bevel on some knives? Not top of the line but just something to make a few knives for friends but not something thats going to tear up. Also what grit does one start with?

I start with 80grit and have had good results. As far as grinders go you can get by with a small one. Its all in how much you want and are willing to put into it! Grinders can be expensive.
I'm no bladesmith, but I have made several knives with my sander. It's a Delta 1" x 42" belt sander, $99 at Depot. I cut my bevels with files, and use the sander to smooth it out.
Oso, I use the same grinder. I grind my profiles and grind my bevels with it. Its a good little machine to get you started.
