Anyone got a recipe for bear jerky? I met a guy a few years back while hunting in California that had a good one but lost track of him. Jim
Jim I use the HI MOUNTAIN Jerky Cure and it does a great job. Hope this helps. Bergie
Hi mountain is good stuff! I have used a smoker but prefer the oven, comes out better. Cut into 1/4" or smaller strips, use the Hi Mountain and mix it in a bowl and lay on jerky racks, 200-250 degrees turning after 1/2 hour or so, taste it now and then and pull out when you like it's dryness.
I dunno, jerky is often cured too low of temp to kill trichinosis. Careful!

Agree with Steve H. Bear and lion both are carriers. Several years ago, I heard from a Forest Service buddy about a batch of lion jerky that someone at their station had brought in. Many got sick from it - didn't kill the trichinosis. Fortunately, he didn't eat any - he has hunted long enough to know about it. I always cook bear well done.
What about the powdered cure you can buy and add to the recipe?
Ive made it. Cooked it WAYYYY overdone for being anything close to real jerky, but it was edible. Need to get internal temp > 160.
I prefer to make "Italian Bear". Will post up a recipie.
